6 cups fresh broccoli florets
1 ½ cups shredded cheddar cheese
¼ cup onion, chopped
1 ½ cups Grapeseed Vegenaise
¼ cup xylitol
3 Tablespoons red wine vinegar
12 strips of sugar-free beef or turkey bacon, cooked and crumbled
1 pound pasture-raised chicken breasts, cooked and diced (optional)
In a large bowl, combine the broccoli, cheese and onion. In a small bowl, combine the vegenaise, xylitol and vinegar.
Pour over broccoli mixture; toss to coat. Cover and refrigerate for at least 30 minutes. Just before serving, stir in the bacon and chicken (if desired).
Save the stalks of the broccoli for a stir-fry or to make your own vegetable broth.
