Salad Recipe from Dr. Nick Zyrowski

Weekly Featured Recipe:
Bacon Cheddar Broccoli Salad
Cheese and bacon generally aren't foods that you'd think would be associated with a healthy diet. If you want to eat them, the trick is that you need to use them in moderation to enhance the flavor of other foods. For example, this incredible broccoli salad!

Our Bacon Cheddar Broccoli Salad is a fantastic addition to any picnic, and can also make for a super quick and portable meal. If you want some extra protein in your lunch, you can also add some chicken to it. It's egg-, nut-, grain-, and sugar-free and only takes 10 minutes to make. Enjoy!

Ingredients

  • 6 cups fresh broccoli florets
  • 1 ½ cups shredded cheddar cheese
  • ¼ cup onion, chopped
  • 1 ½ cups Grapeseed Vegenaise
  • ¼ cup xylitol
  • 3 Tablespoons red wine vinegar
  • 12 strips of sugar-free beef or turkey bacon, cooked and crumbled
  • 1 pound pasture-raised chicken breasts, cooked and diced (optional)

Instructions

  1. In a large bowl, combine the broccoli, cheese and onion. In a small bowl, combine the vegenaise, xylitol and vinegar.
  2. Pour over broccoli mixture; toss to coat. Cover and refrigerate for at least 30 minutes. Just before serving, stir in the bacon and chicken (if desired).

Notes

  • Save the stalks of the broccoli for a stir-fry or to make your own vegetable broth.
