EGG WHITE AND VEGGIE OMELET
Ingredients: 3 egg whites ¾ cup of chopped fresh baby spinach ¼ cup fresh peppers ¼ cup chopped tomatoes ¼ cup mushrooms ¼ cup Greek fat free feta cheese Sea salt/Pepper Herbs to flavor Directions: Spray small nonstick skillet with cooking spray. Combine egg whites and herbs in bowl and set aside. Heat skillet on medium heat. Place vegetables in pan and cook until they start to wilt. Pour egg whites over vegetables and cook until set. Sprinkle feta cheese on top and fold over. Salt and pepper to flavor.
STUFFED BELL PEPPERS
Ingredients: o 4 red or yellow bell peppers o 1 pound lean ground turkey o ½ cup chopped scallions o 1 tsp. garlic o 1 tbsp. Italian seasoning o Pepper o 1 zucchini shredded Directions: Preheat oven to 375 degrees. Cut the top off the pepper and remove the insides. Save the top of the pepper. Cook ground turkey and chopped scallions in skillet and drain. Mix turkey, shredded zucchini, garlic and Italian seasoning in bowl. Place mixture inside the peppers and put the top back on. Place in baking dish close together so they don't fall over. Bake for about 45-50 minutes
